Brussels Sprouts with buddha lemon, Bacon and cheese.


  • 1 Lb Brussels sprouts

  • 1/4 cup Buddha lemon zest

  • 4 ounce piece slab bacon cut into 3/4 inch cubes

  • 1/2 medium onion

  • Salt

  • 2 tbsp water

  • Freshly ground black pepper

  • Monterey Jack cheese



Wash and peel off any loose or damaged leaves from the sprouts. Trim the root end and cut each sprout in half.


Cook the bacon in a large pan over medium heat until bacon just begins to crisp. Transfer the bacon with a slotted spoon to a bowl and set aside, remove some of the bacon grease, cut onion into slices and caramelize in the remaining grease, once caramelized set aside. Add the Brussels sprouts to the pan and season with salt and pepper add 2 tbsp of water and cover them for 5 min.

Once Sprouts are cooked through add the bacon, onions, and lemon zest mix well and turn off heat, promptly add shredded cheese on top and cover. Once cheese is melted serve immediately, and enjoy.
